So in doing some research, I have discussed with a local seafood market owner and here are some things to consider when buying/ordering shrimp: - If in doubt of the shrimp origin, ask to see a invoice from the market or restaurant. If they can not produce a invoice, chances are you are not eating Mayport shrimp. Info Credit: Chris Wooten of Safe Harbor Seafood -This is what is known in the industry as "Black Ringers", aka OLD shrimp. It gets the name due to the dark black rings at the joints, usually tastes mushy. Don't accept "Black Ringers"! If they are calling it asian tiger shrimp run. (A) It's asian...Duh) (B) It is old which gives it the tiger stripes.
